Tomato Jalapeno Salad

Perfect side!  I had this alongside some blackened and grilled shrimp kabobs.  It tasted just like salsa and we all know how healthy salsa is!  Yum!  This was actually a bit too spicy for me, which is rare.  I had a huge jalapeno and because of its size, I seeded it, which I normally don’t do.  Thank God I did!  Whew!  Spicy, but satisfying.  Next time I will use a smaller pepper.


Tomato Jalapeno Salad:

2 medium tomatoes, cut into 1 inch pieces

4 scallions, thinly sliced

1 small jalapeno, seeded and thinly sliced

1 clove garlic, minced

2 Tbsp lime juice

1 c fresh cilantro, chopped

*Toss everything together in a bowl, except the cilantro.  Fold cilantro in just before serving.
