Super simple. Healthy. Fast.
Sausage and Spinach Rice Bowls:
1 1/2 c cooked brown rice
1 tsp olive oil
1 lb hot Italian turkey sausage
1/2 onion chopped
5 cloves of garlic, minced
1/2 c chopped roasted red peppers
1 1/2 c chopped fresh spinach
* Heat olive oil in a skillet. Cook the sausage and onion until crumbled and no longer pink. Stir in the garlic and cook 2 more minutes. Add the peppers and mix through. Add spinach and cook until wilted. Add in rice, mix well, and serve.
