This is yummy. Sorry people, despite the name, no alcohol! 😉 Only 330 calories per serving. This is a make-it-at-home, healthy alternative to T.G.I. Fridays Sizzling Chicken and Cheese (1, 200 calories!).
1 can black beans, drained and rinsed
1 tsp cumin
Juice of one lime
Salt and pepper to taste
1 Tbsp olive oil
3-4 boneless, skinless chicken breasts. pounded down a bit
1 cup prepared salsa verde
1 c shredded Pepper Jack cheese
Chopped fresh cilantro
*Preheat oven to 450 degrees. Combine black beans and cumin in a saucepan and heat all the way through. Squeeze in the lime juice and add some salt and pepper. Remove from heat, but warm before serving.
Heat the oil in a large skillet over medium-high heat. Season the chicken with salt and pepper and sear 3-4 minutes on the first side (until a nice crust develops), then flip. Cook for another 3-4 minutes and then transfer the chicken to a baking dish. Top the breasts with the salsa and cheese and bake 5 minutes. Serve chicken on top of the beans and top all with the cilantro.
