Light Pasta Dish

This is another easy one.  I try to go meatless for a couple meals a week and this one is quite tasty!

Ingredients: 1/2 pint cherry tomatoes halved

                       1 c sun dried tomatoes sliced into strips

                       1 c mozzarella cut into bite-sized pieces

                       1 lb wheat penne pasta

                       handful of baby arugula

                       1/2 c sliced garlic

                       1/2 c olive oil

                       salt and pepper to taste

Cook pasta according to directions.  Drain and rinse with cold water.  Saute garlic in 2 tbs olive oil until golden.  Add sun dried tomatoes and cook 1 minute.  Set aside until cool.  Toss all ingredients together and serve! 

* I am a spice lover, so I also add some crushed red pepper to mine!

    Hey Leslie!
    Just wanted to let you know that I came across this recipe and decided to make it last weekend for the hubby and in-laws. Needless to say, it was a huge success! Everyone kept going back to the bowl for seconds, thirds, whatever, they just kept eating! I think the sun-dried tomatoes and arugula really made it yummy. I sauteed some red onions to go with it too. I told them I got the recipe from you, so we’re all giving eight thumbs up!! I can’t wait to try your other recipes!
