Lemon Cheesecake Ball


Lemon Cheesecake Ball:

10 oz. cream cheese

2 1/2 Tbs sugar

4 tsp lemon juice

zest of one large lemon

graham crackers


* Mix the cream cheese and sugar together.  Add in the lemon juice and zest and mix until smooth.  Form it into a ball and place it in plastic wrap.  Refrigerate for at least 3 hours.  Reform if needed once firmed up.  Crush some graham crackers and roll the ball in them.  Refrigerate until ready to serve.  Serve it up with more graham crackers and some apple slices.
