Horsey Carrots

This is a great side dish!  I served it alongside some grilled chicken sausages.








Horsey Carrots:

1 large bag of baby carrots (each cut in half lengthwise)

3/4 c olive oil mayo

3 Tbs. water

3 Tbs. parsley

1 Tbs. finely grated onion

1 Tbs. white creamy style horseradish

1 1/2 Tbs. butter

1/2 c. breadcrumbs

*  Coat 9 x 13 baking dish with olive oil spray. Boil carrots (8 or 9 min.).  Arrange in a single layer in the dish.  Combine mayo, parsley, water, onion, and horseradish.  Mix.  Spread over carrots.  Melt butter.  Add breadcrumbs and stir until absorbed.  Sprinkle on top of dish and bake @375 for 15-20 minutes.
