Cheese-Topped Grilled Tomatoes:
3 or 4 tomatoes
1/4 c Light Italian dressing
1/2 c shredded part-skim mozzarella cheese
2 Tbsp. grated Parmesan
1 Tbsp chopped fresh herbs (I used basil, parsley, and chives)
*Cut each tomato into 2 thick slices. Drizzle with dressing and top each with both cheeses. Grill 10 to 12 minutes. Sprinkle with herbs before serving.
