Blackened Tilapia with a Garlic/Cilantro/Lime Butter Sauce

P1010011Blackened Tilapia with Garlic/Cilantro/Lime Butter Sauce:

Blackening Rub:

2 Tbsp paprika

1 Tbsp salt

2 tsp onion powder

2 tsp garlic powder

2 tsp cayenne

1.5 tsp black pepper

1 tsp dried thyme

*This makes about 1/3 cup and can be saved for future use.  Use approximately 1 tsp per piece of fish.

Butter Sauce:

2 Tbsp butter, softened

2 Tbsp chopped fresh cilantro

2 cloves garlic, minced

1 tsp lime zest, plus juice of one lime

1 Tbsp olive oil

**Mix butter ingredients together and set aside.  Rub 4 tilapia fillets with blackening spice.  Cook fish 3 to 4 minutes on the first side and then 1 to 2 minutes more after turning.  Serve with butter on top.
