Exercise extends your life (duh).

According to the American Journal of Preventive Medicine:

1.  For every 60 minutes of vigorous physical activity a women does, she gains 11.3 hours to her life expectancy.

2.  For every 60 minutes of moderate activity, she gains 5.6 hours.

Pretty cool to break it down like that.

Christmas Themed Food

I always let my boys pick the theme for their joint birthday party each year.  They are always creative with it and this year was no different…CHRISTMAS IN JUNE!  It was easy enough to order Christmas paper products and decor online because it was all on clearance!  I also had the added benefit of pulling out a few of my own decorations for the season.  Here are just a few of the Christmas themed foods we served:

Chocolate Chip Cookie Cheesecake

Chocolate Chip Cookie Cheesecake:

  • 3 (8-ounce) packages cream cheese, softened
  • 3 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 (16.5-ounce) rolls refrigerator chocolate chip cookie dough

*Preheat oven to 350.  In a large bowl, beat together cream cheese, eggs, sugar, and vanilla extract until well mixed; set aside. Slice cookie dough rolls into 1/4-inch slices. Arrange slices from one roll on bottom of a greased 9- x 13-inch glass baking dish.  Press together so there are no holes in dough. Spoon cream cheese mixture evenly over dough; top with remaining slices of cookie dough.   Bake for 50 minutes.  Let cool completely, chill, cut and serve.

Birthday Breakfast

Birthday season is here…5th birthday for Jonah today, joint birthday party this weekend, then Cayden’s 4th birthday next week.  Whooo!

Today, Jonah woke to the usual balloons, birthday messages, paper chains, and birthday crown.  We wanted a special breakfast and knowing that the boys love pancakes the best, we improved them for this special day.  We topped them with whipped cream and chocolate chips!  They were thrilled!  This is just the beginning of a fun, fun day!  🙂

Lentil Salad

Yep, another lentil salad.  Vegetarians rejoice!  I just happened to have all the ingredients on hand.  Pretty tasty.  It makes 4 servings at 425 calories each.  The recipe calls for 1 large cucumber, peeled, seeded, and chopped, but I omitted it, because I am not a fan.  It’s your call if you want to add it in.  Here is the recipe I used.

Lentil Salad:

1 Tbsp Dijon mustard

2 Tbsp Red Wine Vinegar

4 Tbsp olive oil

1 tsp salt, plus more to taste

fresh ground black pepper to taste

4 c cooked lentils

1 1/2 pints grape tomatoes, halved

1 c chopped carrots

1 c chopped celery

 1/2 c chopped red onion

1/4 c chopped fresh parsley

* Mix mustard, vinegar, oil, salt and pepper in a large bowl with 2 Tbsp water.  Whisk.  Add remaining ingredients and toss until evenly coated.

Creatology 3D Dinosaurs Foam Activity Kit

Creatology 3D Dinosaurs Foam Activity Kit was given to me by my mother-in-law.  She found it at Michael’s Craft Store.  It was fun for them to do together and today we made some more.  Each kit makes 8 dinosaurs (4 kinds).  Great for a rainy day!
